Ice Cream Pie Recipe: Easy Strawberry Ice Cream Pie

This frozen strawberry pie is so easy to make and delicious on a warm summer afternoon.

1 (3 oz.) package strawberry flavored gelatin


1 1/2 cups boiling water


2 cups fresh strawberries, sliced


2 cups vanilla ice cream, slightly thawed


1 1/4 cups boiling water


1 (9-inch) ready made graham cracker crust

Directions

Dissolve gelatin in boiling water. Gradually add in the vanilla ice cream. Stir until ice cream is melted. Put mixture into freezer and chill just until thick, but not firm (about 25 minutes).

Fold the strawberries into the ice cream mixture. Pour mixture into prepared pie crust. Chill for up to 3 hours, or until firm. Garnish with whipped cream and walnut halves.

1 quart vanilla ice cream, softened

Directions

Preheat oven to 350 degrees.

Bake the pie crust for 8 to 10 minutes, until it is a light brown color. Allow crust to cool. Set aside.

In a large bowl, combine the ice cream, lemonade and whipped topping. Mix until nice and creamy. Pour into the pie crust. Place in freezer for 30 to 60 minutes.

Spread softened ice cream into prepared crust. Spread softened sherbet over the ice cream. Freeze pie for up to 3 hours, or until firm. Take pie out of freezer and add whipped topping on top. Freeze for another 30 minutes.

Before serving, remove pie from freezer and garnish with mandarin oranges and sprinkled toasted coconut.

Place sliced bananas in bottom of pie crust. Spread the strawberry ice cream over bananas, evenly. Next, add the pineapple.

In a bowl, whisk the cream until peaks form. Spread whipped cream on top of the pie. Sprinkle with nuts. Freeze pie for up to 3 hours, or until firm. Garnish with cherries. Drizzle chocolate syrup on top.

Pie Crust

1 1/2 gingersnap cookies, crushed


1 tablespoon sugar


1/4 cup butter, melted

Pie Filling

1 cup pumpkin puree


1 cup white sugar


1/2 teaspoon salt


1/2 teaspoon ground ginger


1/2 teaspoon ground cinnamon


1/4 teaspoon ground nutmeg


2 cups frozen whipped topping, thawed


2 cups vanilla ice cream, softened

Directions

Preheat oven to 300 degrees.

Pie Crust

In a bowl, combine gingersnap crumbs and the 1 tablespoon of sugar; mix well. Stir in the melted butter. Press mixture into a 9-inch pie shell. Bake crust for 15 minutes. Let cool. Place crust in freezer for 1 hour so that it is nice and firm. Take pie shell out of freezer and make pie filling.

Pie Filling

In a medium bowl, combine pumpkin, remaining sugar, salt, ginger, cinnamon and nutmeg. Mix completely. Fold in the whipped topping.

Spread the softened vanilla ice cream in the bottom of the pie crust. Pour pumpkin pie mixture on top of ice cream. Freeze pie for up to 2 hours, until firm. Garnish with whipped topping and gingersnap cookies.

Baking Recipe – Poppy Seed Cake

This is my favorite birthday cake recipe that my mom made for me every year. Mom always made us feel special on our birthdays. We got our favorite meal and she'd make whatever cake we wanted. This one was almost always the one I requested. I made it for myself once I was out on my own and finally realized just how much effort I made mom go through each year. But the payoff was so worth it. I love this cake because it is unlike traditional cake recipes. The taste and texture is so unique. I hope you like it.

Poppy Seed Cake

3/4 cup butter

3/4 cup milk

2 teaspoons baking powder

1/2 cup poppy seed

1 1/2 cups white sugar

2 cups flour

4 egg whites beaten

1/2 to 1/4 cup milk

Soak the poppy seed in 3/4 cup milk overnight or at least 2 hours. Beat egg whites in a small bowl. Reserve the egg yolks for the caramel topping below. Combine all of the other ingredients and then add the egg whites. Pour into a 9 x 13 inch greased pan. Bake at 350 degrees for 40 to 45 minutes.

The following two recipes are the frosting for this cake.

Caramel Topping

4 egg yolks

1/2 cup chopped pecans

1/2 cup cream

1 cup white sugar

Combine above ingredients and cook until thick. Spread over the top of the cooled cake.

7 Minute Boiled Frosting

1 egg white

3/4 cup white sugar

1 tablespoon white syrup

2 1/2 tablespoons water

1 teaspoon vanilla

Put the first four ingredients in a double boiler and heat over medium heat. With an electric mixer, beat the mixture until it stands in peaks. It should look white and creamy. Add vanilla and spread frosting over caramel topping on cake.

The One Minute Millionaire - Book Review

"The One Minute Millionaire" by Mark Victor Hansen and Robert Allen is actually two books in one. The book is half fiction and half non-fiction. It's a unique idea that I've never seen before in print. The right hand pages present a fiction, developing a story from beginning to end. The facing pages are non-fiction as they develop the real world concepts that are being used in the fiction story.

The technique seems to work well because both the fiction story and the non-fiction treatment are very absorbing. I found myself re-reading sections as I progressed.

The fiction story is about a young mother, Michelle, who must create a million dollars in only ninety days or else lose custody of her two children. She is initially overwhelmed by the enormity of the challenge and she has no idea how to get started. However, she is lucky enough to hear a woman give a presentation about wealth building. She works up the courage to meet the woman, presents her problem, and asks for help. After this breakthrough, Michelle and her new mentor meet others who become part of her new team. The team develops several streams of income to help Michelle solve her problem.

The non-fiction side of the story builds upon Robert Allen's concept that multiple streams of income are necessary in order to create real wealth. The non-fiction pages contain both general and detailed information about the process of developing streams of income. The non-fiction treatment develops in a logical fashion in step with the progression of the fiction story.

The numerous concepts that are used to help Michelle create the necessary wealth in the fiction story are one minute concepts. That is, the concepts are simple enough to be described in about a minute. Michelle, her mentor, and her team are wise enough to assemble all of the one minute concepts and put them into action, action that helps Michelle become the one minute millionaire.

As in many of their other books, Allen and Hansen use quotations from famous people to open sections of the book. The quotes are interesting in themselves and always contain the core of a larger thought that is developed in the following section.

The story and the concepts in the book are supported by numerous materials, including forms and documents and a website. The intent of the book is to both be entertaining and to be instructional. As Allen and Hansen state in the opening pages of the book, "This is our mission: to positively change the world by providing the tools and a path (our system) to those who commit to become Enlightened Millionaires."
